Try this recipe and let me know in the comments which version you liked more—the fluffy onion rolls or the beautiful French-style loaf. 🥖 INGREDIENTS For the dough: • 200 ml warm water — 3/4 cup + 1 tbsp • 30 ml honey — 2 tbsp • A pinch of salt • 2 tsp dry yeast • 3 tsp olive oil or vegetable oil • 400–450 g bread flour — approximately 3 1/3–3 3/4 cups For the caramelized onions: • 2 large onions • Olive oil for frying • 1 tbsp sugar For the honey and olive oil mixture: • 1 tbsp honey • 1 tbsp olive oil For the topping: • 1 egg • Coarse sea salt • Herbes de Provence or your favorite dried herbs 👩🍳 STEP-BY-STEP RECIPE Pour the warm water into a large mixing bowl. Add the honey and stir until it has completely dissolved. Add a pinch of salt, dry yeast, and olive oil. Mix well after adding each ingredient. Sift 200 g of bread flour into the bowl and mix until you have a soft, slightly runny dough. Cover the bowl and leave the dough in a warm place for 30 minutes. While the dough is rising, peel and slice two large onions. Heat a little olive oil in a frying pan and add the onions. Add 1 tablespoon of sugar and cook over medium heat until the onions become soft, golden, and caramelized. Add the caramelized onions to the risen dough and gently mix them in. Gradually add another 200–250 g of flour and knead the dough by hand. The finished dough should be very soft, elastic, and still slightly sticky. Do not add too much flour. Lightly coat the dough with oil, shape it into a ball, cover the bowl, and leave it to rise for 1 hour. Transfer the risen dough to a lightly floured work surface and divide it into two equal parts. Divide the first half into three pieces and shape them into round onion rolls. Place the rolls into a baking dish. Flatten the second half of the dough and roll it into a thin rectangular layer. Mix 1 tablespoon of honey with 1 tablespoon of olive oil. Brush the honey and olive oil mixture evenly over the entire surface of the dough. The honey adds a delicate caramel sweetness and helps create a glossy golden crust, while the olive oil keeps the bread tender, aromatic, and soft for longer. Make parallel cuts approximately every 2 cm or 3/4 inch, without cutting completely through the dough. Carefully roll the dough into a log and place it in a baking dish. Brush the rolls and the loaf with beaten egg. Sprinkle the rolls with coarse sea salt. Sprinkle the loaf with Herbes de Provence or your favorite dried herbs. Bake in a preheated oven at 180°C or 350°F for approximately 30 minutes, until beautifully golden brown. Allow the bread to cool slightly before serving.
