Ingredients and recipe: 200 ml milk (1 cup or 6.8 fl. oz.) 8 g dry yeast (2 tsp or 0.3 oz.) 20 g sugar (1 tbsp or 0.7 oz.) 1. Mix well 50 g flour (1/3 cup or 1.8 oz) 2. Mix well 3. Cover tightly and let rest for 15 minutes 4. The legendary Swiss technique from 1876 200 ml water (1 glass or 6.8 fl. oz.) 40 ml sunflower oil (1/4 cup or 1.4 fl. oz.) Egg whites from 2 eggs 4. Set aside the yolks for later 5. Mix well 650 g flour (4.3 cups or 22.9 oz) 6. The yeast is very active, the smell is amazing 7. Add the yeast and mix 9. Add the flour in portions 5 g salt (1 tsp or 0.2 oz) 10. Mix with a dough scraper 11. Knead the dough for 5–7 minutes 15. The dough should be smooth and not sticky 16. Grease the bowl 17. Cover the dough and let it rest for 1 hour 18. The dough is very airy and soft! 19. Dough weight: 1185 g (41.8 oz) 20. Divide the dough into 9 equal pieces 21. Shape them into balls 22. Cover with a cloth and rest for 15 minutes 23. A very handy trick 24. How to quickly roll out many dough pieces 25. Take three dough pieces 26. Roll each piece out a little 27. Dust well with flour 28. Stack the dough pieces on top of each other 29. Roll the dough into a 28–30 cm circle 31. Place it on a plate 32. Spread 150 g butter (1 cup) on it 33. Place more dough on top and spread butter again 34. Roll out the remaining dough pieces 35. I managed to roll out 5 dough pieces at once 37. This is a very simple and fast method 38. Cover the dough and put it in the freezer for 1 hour 39. I love fresh greens straight from the garden 40. The scent is incredible 41. Chop a bunch of dill 42. Press 2 garlic cloves 43. Add 60 g (1/3 cup) butter 44. Mix together 45. The butter has set, the dough is ready 46. Roll the dough out to 55 x 70 cm 47. Spread the filling over the dough 48. The smell of garlic and dill is amazing! 49. Fold the dough, follow my lead 50. Roll the dough out a bit 51. Cut the dough into 2 cm wide strips 52. Place two strips on top of each other 53. Shape the prettiest puff pastry figure eight 54. It’s super easy, just follow along 55. Place them on a baking sheet 56. Shape the remaining figure-eight rolls 57. These rolls are way prettier than croissants 58. Cover and let rest for 1 hour 59. They’re incredibly flaky! This recipe is fantastic! 2 egg yolks 15 ml milk (1 tbsp) 60. Brush the puff pastry rolls 61. Bake for 30 minutes at 180 °C (360 °F) 62. Wow! What beautiful, flaky, and fragrant rolls! 63. Let’s brew some delicious tea 5 apple slices 15 g rose hips (1 tbsp or 0.5 oz) 8 g mountain herbs (2 tsp or 0.3 oz) 8 g black tea (2 tsp or 0.3 oz) 64.
