The secret lies in the fantastic yeast dough: it is wonderfully smooth, feather-light and rises like a pillow. Even while kneading, you can feel how fluffy it becomes, and the fine raisins give it an even more refined texture. What awaits you inside? An absolute culinary dream! Instead of raw fruit, we conjure up a luxurious filling: Juicy apple pieces are gently sautéed in softly melting butter with natural vanilla and cinnamon. A teaspoon of cornstarch binds the escaping fruit juice and transforms it into a velvety, golden caramel nectar that stays perfectly in shape during baking. The magic of baking: Each roll is lovingly shaped by hand and brushed with a fine egg-milk mixture just before baking, which gives it an irresistible shine. After just half an hour in the oven, you'll have a true masterpiece – with a wonderfully golden-brown crust, a cottony-soft, fine-pored dough, and a fruity-juicy filling that literally melts in your mouth. The perfect reason to bring loved ones to the table for a cup of freshly brewed coffee, tea or warm milk. But beware: These particles are usually gone before they've even cooled down properly! Recipe: 500-550 g wheat flour (4 cups). 3 tablespoons of sugar. 20 g fresh yeast (1 oz). 250 ml warm milk (1 cup). 100-150 g raisins (approx. ⅔-1 cup) 70 g butter (2 1/2 oz). 1 egg + 1 egg yolk. 5-6 g salt (1/2 teaspoon). For the filling: 3 apples. 50 g butter (1 1/2 oz). 10 g cinnamon (1 teaspoon). 4 tablespoons of brown sugar. 10 g vanilla sugar (2 tsp). 1 teaspoon of cornstarch. Knead the dough and let it rest for 60 minutes. Shape the rolls as shown in the video. Brush with the egg-milk mixture. Bake at 180°C (356°F) for 25-30 minutes.
