MENU KAMBING UNTUK IDULADHA NIH : Rabeg Kambing
Rabeg, a typical Banten dish with a sweet, spicy, and savory flavor, is a must-try! The meat used is usually goat, and what's even more interesting is that this dish uses the spice klabat, also known as klabet. The cooking method is also similar to stew. No wonder it's a royal dish! It's said that Rabeg was invented by Sultan Maulana Hasanudin, who was on his Hajj pilgrimage to Arabia and enjoyed this Middle Eastern dish in the Rabigh area, made from goat. He fell in love with it, and asked the royal chef to make Rabeg a royal dish. The complete recipe for Goat Rabeg can be found below. Ingredients: 300 g goat meat 300 g goat ribs 2 stalks lemongrass 6 bay leaves 5 shallots 3 cloves garlic 1 segment galangal 1 segment ginger 1 stalk lemongrass 3 large red chilies 15 red bird's eye chilies 5 cm cinnamon stick 30 g Javanese sugar Sweet soy sauce 100 ml tamarind juice 1 L water Salt Mushroom broth Ground spices: 5 shallots 3 cloves garlic 1 segment ginger 4 candlenuts 1 nutmeg 1 tsp whole pepper 1 tbsp whole coriander 7 curly red chilies 1 tbsp fenugreek (Klabet) Toppings: Fried onions Method: 1. Grind the ground spices with a little water and set aside. 2. Cut the goat meat to your liking and set aside. 3. Boil water with 6 bay leaves and 2 stalks of lemongrass in a pressure cooker until boiling. 4. Once boiling, add the goat meat and ribs. 5. Add salt to taste, cover the pressure cooker, and cook for 30 minutes. 6. After 30 minutes, drain the meat and save some of the broth for cooking. 7. Thinly slice the shallots and garlic and set aside. 8. Slice the ginger and galangal into matchstick-sized pieces and set aside. 9. Slice the large red chilies diagonally and set aside. 10. Prepare a frying pan for cooking, add oil and heat. 11. Once hot, add the sliced shallots, garlic, galangal, and ginger. 12. Cook until fragrant, then add 2 bay leaves, lemongrass, ground spices, cinnamon, and cayenne pepper, and cook until the strong odor disappears. 13. Then, add the goat meat, add a little broth, sweet soy sauce, palm sugar, and tamarind water. 14. Stir well and add salt and mushroom stock, then cook until the sauce thickens. 15.
