Mieseo, or Miso, is a typical Pekanbaru soup dish containing yellow noodles, rice noodles, tofu, chicken, and a special spicy sauce. Ingredients: 4 pieces of brown tofu 100g yellow noodles 100g rice noodles 1 chicken 2 stalks lemongrass 5cm cinnamon 4 cloves 2 star anise 4 white cardamom pods 2 stalks celery 1 stalk scallion 1 1/2 L water Salt Mushroom broth Ground spices: 7 shallots 4 cloves garlic ¼ nutmeg 1 piece ginger 1 tsp whole peppercorns How to make: 1. Place the ground spices in a blender, add water, and blend until smooth. Set aside. 2. Heat a wok for sautéing, then sauté the ground spices until fragrant. 3. Once fragrant, add the water, chicken, cinnamon, cardamom, star anise, cloves, and bruised lemongrass. 4. Add salt to infuse the chicken with flavor. 5. Cook until the chicken is cooked through and the broth is strong. 6. Once the chicken is cooked, remove it and let it cool. 7. Once the chicken has cooled, fry it until golden brown. 8. Shred the chicken and set aside. 9. Prepare a serving bowl and arrange the yellow noodles, rice noodles, shredded chicken, tofu, and 1 piece of chicken thigh. 10. Pour over the sauce, then sprinkle with spring onions, celery, fried onions, and sweet soy sauce, then serve.
