Zaalouk is a delicious cream of eggplant cooked slowly with tomatoes, garlic, and spices, perfect to enjoy with freshly baked pita bread as an appetizer or side dish. Ingredients 1 large eggplant 3 ripe tomatoes (seeded) 3 cloves of garlic 3 tablespoons of olive oil 2 teaspoons of cumin 2 teaspoons of sweet paprika 1 teaspoon of salt 1/2 teaspoon of black pepper 1/4 teaspoon of chili flakes (optional) 1 tablespoon of tomato paste (optional) 2 tablespoons of chopped parsley 2 tablespoons of chopped cilantro Juice of 1/4 of a lemon (optional) Preparation 1. Cook the eggplant in olive oil for 8-10 minutes. 2. Add the tomatoes and cook for 5 more minutes. 3. Stir in the garlic, cumin, paprika, salt, pepper, chili flakes, and tomato paste. 4. Cover and cook over low heat for 15-20 minutes. 5. Uncover and cook for a few more minutes until you get a creamy texture. 6.
