Brush the eggplant halves with olive oil, salt, pepper, paprika powder and dried garlic and place them on a baking sheet. Mix the eggplant flesh with diced tomato, garlic, grated cheese, yogurt, salt, pepper and paprika powder. Fill the eggplant boats with the filling. Carefully place 4 eggs on top of the filling (one egg per eggplant half). Sprinkle with salt and grate Parmesan cheese over it. Sprinkle with chopped parsley and bake for 40 minutes at 180°C. 🍆 RECIPE 2 08:35 Mediterranean stuffed eggplants with cherry tomatoes, mozzarella & couscous. 📌 INGREDIENTS: Eggplants – 2 pcs Cherry tomatoes – 350 g Garlic – 2 cloves Basil (fresh) Mozzarella – 200 g Olives – 50 g Olive oil Italian herbs Salt, black pepper Couscous – 200 g Water – 250 ml Zucchini – 1 pc Carrot – 1 pc Red bell pepper – 1 pc Onion – 1 pc Olive oil Salt, black pepper 👩🍳 PREPARATION: Cut the eggplants lengthwise several times (like an accordion) or halve them lengthwise, brush with olive oil, season with salt and pepper and bake for 30 minutes at 200°C. Halve the cherry tomatoes and sauté them with garlic, basil and Italian herbs in olive oil for 7-8 minutes. Cut a slit in the baked eggplants, form a hollow and fill with cherry tomatoes, mozzarella and olives. Bake for another 10 minutes at 200°C. Meanwhile, pour boiling water over the couscous, let it soak, and mix it with sautéed vegetables (zucchini, carrots, bell peppers, onions). #fullofvegetables #eggplants #vegetablerecipes #healthyfood #dinner
