Ingredients for one pizza pan: • 450 g of type 0 or 00 flour, or even re-milled semolina • 250/270 g of water • 45 g of extra virgin olive oil • 12 g of salt • 8 g of fresh yeast or 3 g of dry yeast • (optional) 1 teaspoon of malt, honey, and sugar. For the toppings: • 300 g of tomato puree • 400/500 g of fiordilatte • oil, salt, oregano, garlic, or basil • or toppings of your choice.
