Over time, Neapolitan pizza has continued to evolve and be reinterpreted in different shapes and styles, including pan pizza with highly hydrated dough. The high hydration dough has become a distinctive feature of Neapolitan pan pizza. This type of dough makes the pizza lighter and fluffier on the inside, with a thin, crunchy crust. The high hydration of the dough requires careful processing and a precise technique to obtain a perfect consistency, and requires a longer leavening period than traditional doughs.
