Roll out the dough with a rolling pin. brush with butter. Fold the dough as I show you. Place the dough in the freezer for 1 hour. repeat the procedure one more time. Place the dough in the freezer for another 30 minutes. prepare the syrup: 100 ml of water. 100 g of sugar. simmer for 5 minutes. Make cuts as I show you. Add the chocolate cream to each piece of croissant dough. Start rolling the dough into croissants. Place on a baking tray lined with baking paper. Do the same with all the remaining pieces of dough. cover and leave for 25 minutes. Brush the top with egg. Bake at 180 degrees Celsius for 25 minutes. Brush each croissant with syrup.
