Learn how to make a super healthy and protein packed Lauki Chana Dal and Moong Sprouts Sabzi in one kadai — no pressure cooker needed! This simple Indian sabzi is loaded with fibre, protein and nutrition, perfect for lunch or dinner with roti or rice. 🥒🫘🌱 🛒 INGREDIENTS 🥒 Lauki (Bottle Gourd) — 1 medium, cubed 🫘 Chana Dal (soaked 1 hour) — ½ cup 🌱 Moong Sprouts — ½ cup 🧅 Onion — 1 medium, chopped 🧄 Garlic — 4-5 cloves, minced 🌿 Green chilli — 1-2, chopped 🫙 Oil — 2 tbsp 🧂 Salt — to taste 💧 Water — as needed Basic Spices: 🟡 Turmeric powder — ¼ tsp 🔴 Red chilli powder — ½ tsp 🟤 Coriander powder — 1 tsp 🟤 Cumin powder — ½ tsp 🌿 Garam masala — ¼ tsp Tempering: 🌱 Mustard seeds — ½ tsp 🌱 Cumin seeds — ½ tsp 🍃 Curry leaves — 8-10 🟡 Hing (Asafoetida) — a pinch 👩🍳 METHOD Step 1 — Soak Chana Dal Wash and soak chana dal for at least 1 hour. Drain and set aside. Step 2 — Tempering Heat oil in a kadai. Add mustard seeds and let them splutter. Add cumin seeds, hing, curry leaves, green chilli and garlic. Sauté for 1 minute until fragrant. Step 3 — Cook Onion Add chopped onion and sauté until golden brown. Step 4 — Add Spices Add turmeric, red chilli powder, coriander powder and cumin powder. Mix well and cook for 1 minute. Step 5 — Add Dal and Lauki Add soaked chana dal and cubed lauki. Mix well. Add water, cover and cook on medium flame for 15-18 minutes until dal and lauki are soft. Step 6 — Add Sprouts Add moong sprouts, mix gently and cook for another 5 minutes on low flame. Step 7 — Finish and Serve Add garam masala and mix well. Garnish with fresh coriander.
