Before we begin, remember this: “Food made with intention and gratitude always tastes better.” 🧾 INGREDIENTS 5 processed tomatoes 1/2 finely chopped green bell pepper 1 finely chopped red bell pepper 1/2 finely chopped onion 2 finely chopped garlic cloves 1 tablespoon paprika Salt to taste Black pepper to taste Olive oil 4 eggs Chopped fresh cilantro 👨🍳 PREPARATION Start by sautéing the onion in olive oil until soft and fragrant. Then add the green and red bell peppers and continue cooking for a few minutes before adding the finely chopped garlic. Next, stir in the paprika to give it that characteristic color and deep flavor of Mediterranean Arabic cuisine. Add the processed tomatoes and cook the sauce slowly. At this point, add the salt to help the tomatoes release their juices and achieve a balanced and delicious acidity. Once the sauce is cooked and thickened, make small wells in the pan and carefully add the eggs so they retain their shape.
