Once the sugar has dissolved, add the cucumber, ginger and chili pepper, and continue to cook over high heat while frying. ④ When most of the liquid has evaporated, add the shiso leaves. Turn off the heat, sprinkle in the salted kelp and white sesame seeds, mix, and then leave to cool. ■Cucumber Chanpuru (serves 2) Ingredients: 2 cucumbers, 1 block of firm tofu, 150g bacon block, 2 eggs, a little sesame oil, a moderate amount of black pepper, 1g dried bonito flakes, a moderate amount of chopped nori seaweed A (1 teaspoon sugar, 2 tablespoons soy sauce) How to make: 1. Remove the stems from the cucumbers and cut them into large chunks. 2. Drain the tofu with kitchen paper and tear it into large chunks with your hands. 3. Cut the bacon into bite-sized chunks. 4. Beat the eggs in a bowl. 5. Heat sesame oil (1 tablespoon) in a frying pan over medium heat. 6. Brown both sides of the tofu thoroughly and remove to a tray. 7. Add sesame oil (1.5 tablespoons) to the same frying pan and brown the bacon thoroughly over medium heat. ④ Add the cucumber and stir fry briefly. Put the tofu back in, turn the heat to low and pour in the beaten egg. When the outside of the egg has solidified, stir fry lightly. Turn off the heat and add A, black pepper, and bonito flakes.
