#TraditionalFlavor #HakkaCuisine #Pastry #Food #HakkaGarlicDumpling #SimpleRecipe #EasyToMake #VegetableDumpling ------------------------------------- 300g Garlic Sprouts (finely chopped) 3 Pieces of Dried Tofu (diced) 2 tbsp Dried Shrimp (soaked and chopped) 2-3 Cloves of Garlic (chopped) Seasoning: 2 tbsp Oyster Sauce 1/2 tsp Sugar 1/2 tsp Salt 1 tsp Pepper 👩🍳 Stir-frying the Filling (Key 🔥) Heat oil → Sauté garlic and dried shrimp until fragrant Add dried tofu and stir-fry until fragrant Finally add vegetables: Garlic Sprouts 👉 Stir-fry for 30–40 seconds Add seasonings Stir-fry until slightly dry → Let cool and set aside 👉 ❗Do not let it get wet, otherwise the dumpling will break 🥟 Dough 200g Tapioca Flour 100g Rice Flour Boiled Water 230–250 ml Oil 1 tbsp Salt a pinch 👩🍳 Making the Dough Mix flour and salt Pour in boiling water → Stir quickly Add oil → Knead into a smooth dough Cover to keep moist 👉 The dough should be warm 🥟 Wrapping Method Each dough piece 👉 30g Wrap in an appropriate amount of filling (approximately the same weight) Fold in half and pinch closed 👉 Dust with a little flour (to prevent sticking 👍) ♨️ Steaming Steam for 12 minutes after the water boils ✨ Key to removing from the steamer (must do this‼️) 👉 Immediately brush with a thin layer of oil ✔ Non-stick ✔ Shinier ✔ More chewy 🌶️ Soul Chili Sauce Chili Garlic Soy sauce Sugar Vinegar / Lime juice 👉 Simply blend 😋 🔥 Key to Success (Remember These Tips) ✔ Dry filling ✔ Add vegetables last ✔ Use boiling water ✔ Wrap while hot ✔ Grease after steaming --------------------------------------------------- Garlic Chives Filling (300g, finely chopped) Firm tofu (3 pieces, diced small) Dried shrimp (2 tbsp, soaked and chopped) Garlic (2–3 cloves, minced) Seasoning: Oyster sauce – 2 tbsp Sugar – ½ tsp Salt – ½ tsp White pepper – 1 tsp 👩🍳 Stir-fry the filling (Key 🔥) Heat oil → sauté garlic + dried shrimp until fragrant Add tofu and stir-fry until aromatic Lastly add vegetables: Garlic chives 👉 stir-fry 30–40 seconds Add seasoning Cook until slightly dry → set aside to cool 👉 ❗Do NOT leave it wet, or the dumplings will break 🥟 Dough (Wrapper) Tapioca starch – 200g Rice flour – 100g Boiling water – 230–250 ml Oil – 1 tbsp Salt – a pinch 👩🍳 Make the dough Mix flour + salt Pour in boiling water → stir quickly Add oil → knead into a smooth dough Cover to retain moisture 👉 Use the dough while still warm 🥟 Wrapping Each piece of dough 👉 30g Fill with an appropriate amount of filling (about equal weight) Fold and seal tightly 👉 Dust lightly with flour (to prevent sticking 👍) ♨️Steaming Steam for 12 minutes after water is Boiling ✨ Important step after steaming (must do‼️) 👉 Immediately brush a thin layer of oil ✔ Prevents sticking ✔ Makes it shinier ✔ Improves chewiness (QQ texture) 🌶️ Chili Sauce (Soul of the dish) Chili Garlic Soy sauce Sugar Vinegar / calamansi juice 👉 Blend together and it’s ready 😋 🔥 Key Tips for Success ✔ Filling must be dry ✔ Add vegetables last ✔ Use boiling water ✔ Wrap while dough is warm ✔ Brush oil after steaming -------------------------------------- Thank you for watching "SUBCRIBE" Likes and share your subscription is my biggest encouragement.
