Very fragrant with red bean flavor, delicious and foolproof! Homemade Red Bean Paste 🌸 Ingredients Red beans: 200g Water: 1000ml Sugar: 80–120g (depending on your sweetness) Cooking oil: 30–40g Salt: a pinch 🥣 Instructions Soaking (Recommended) Wash the red beans and soak for 4 hours or overnight. Cooking the Red Beans Cook the red beans and water together. Bring to a boil over high heat → Reduce heat and simmer for 40–60 minutes. 👉 Cook until the red beans "bloom" and are easily mashed. (Alternatively, use a pressure cooker: about 20 minutes) Pulverizing (Optional) For a smoother texture: use a blender. For a more textured feel: simply mash. Stir-frying the Red Bean Paste Add oil, red bean paste, and sugar to a non-stick pan. Stir-fry slowly over low heat (crucial!) 👉 Stir constantly to prevent sticking. 👉 Stir-fry until: The moisture decreases. It can form a ball and is no longer sticky. It's slightly dry but not hard. Let it cool. It will be drier after cooling, which is perfect for making steamed buns 👍 ✅ Key to Success ❗The beans must be cooked until very soft (otherwise they will be coarse) ❗Stir-fry until they can "form a ball" before wrapping ❗Too wet → will leak when wrapping ❗Too dry → will have a hard texture ⚠️ A very crucial difference (many people make this mistake) ❌ Red bean paste that is too wet → will "flow out" and the rice dumpling will fall apart Alkaline Water Red Bean Rice Dumplings (🌿 Ingredients (makes about 12-16 rice dumplings) Glutinous rice: 500g Red beans: 200g Alkaline water (alkaline water/lye water): 1.5 tablespoons Cooking oil: 1.5 tablespoons Water: as needed (for soaking rice) Bamboo leaves: as needed Bamboo string: as needed 🥣 Instructions Prepare the glutinous rice Wash the glutinous rice Soak in water 4–6 hours After draining, add alkaline water and cooking oil and mix well. 👉 The color will turn slightly yellow, which is normal. 🥟 IV. Key Points for Wrapping Zongzi First, put in a little glutinous rice. Add red bean paste. Then cover with glutinous rice. 👉 This will prevent the filling from leaking out. 👍 Cooking Zongzi Water should completely cover the zongzi. Bring to a boil over high heat → Reduce to medium-low heat. Cook for 2.5–3 hours. 👉 If using a pressure cooker: about 1 hour. --------------------------------------------------- 🌿 Homemade Alkaline Water Red Bean Rice Dumplings (Kee Chang with Red Bean Filling) Chewy, soft, and glutinous with a rich red bean aroma — delicious and fail-proof! Homemade Red Bean Paste 🌸 Ingredients Red beans: 200g Water: 1000ml Sugar: 80–120g (adjust to your preferred sweetness) Cooking Oil: 30–40g A pinch of salt 🥣Method 1. Soak (recommended) Wash the red beans and soak for 4 hours or overnight. 2. Cook the red beans Add red beans and water into a pot. Bring to a boil over high heat, then reduce to low heat and simmer for 40–60 minutes. 👉 Cook until the beans “split open” and can be easily mashed. (You can also use a pressure cooker: about 20 minutes.) 3. Blend (optional) For a smoother texture: blend with a blender. For a chunkier texture: simply mash the beans. 4. Fry the bean paste Add oil, mashed red beans, and sugar into a non-stick pan. Cook over low heat slowly (this is very important ❗). 👉 Keep stirring continuously to prevent sticking. 👉Cook until: moisture is reduced the paste can hold together in a ball and doesn’t stick to your hands slightly dry but not hard 5.Cool down Once cooled, the paste will dry a little more — perfect for wrapping into dumplings 👍 ✅ Success tips ❗Cook the beans until very soft (otherwise the texture will be rough). ❗Cook until the paste can form a ball before using as filling. ❗Too wet → filling will leak out. ❗Too dry → texture will be hard. ⚠️Important note (common mistake) ❌ If the red bean paste is too wet, it will ooze out and the dumplings may fall apart. 🌿 Alkaline Water Red Bean Rice Dumplings (about 12–16 dumplings) 🌸 Ingredients Glutinous rice: 500g Red beans: 200g Alkaline water (lye water): 1.5 tbsp Cooking oil: 1.5 tbsp Water: enough for soaking rice Bamboo leaves: as needed Bamboo leaves String: as needed 🥣Method 1.
