Records show that the Edo Shogunate responded to Commodore Perry and his crew not with military force, but with a celebratory banquet. From the first course to the second, starting with dried squid and kelp, followed by grilled fish, sashimi, simmered dishes, soup, and then the side dishes, Each dish has a clear role, and we've recreated a systematically structured meal that showcases Japanese food culture. Through this cuisine, we can see the aesthetic sensibilities of the Edo Shogunate and the pride of Japanese food culture.
