160年前のイギリス料理とは?産業革命時代に生まれた料理を当時のレシピ通りに再現してみた

[Rekimeshi], or "Historical Recreation Meals," recreates historical food cultures for the modern age. Today, we've recreated British cuisine from the 1860s, right in the middle of the Industrial Revolution. In this era, steam engines powered factories and railroads transported fresh ingredients throughout the country. Amidst rapid urbanization, people's diets differed dramatically depending on their social class. High-calorie "fish and chips" and hearty "jam rolly polly," made with beef tallow, sustained factory workers who worked 14-hour shifts. Meanwhile, in the homes of the affluent middle class, "beef roast," slow-roasted by servants for hours, and the sophisticated "Victoria sandwich," a favorite of the Queen, graced the tables. "Highly efficient fuel" for survival, and "elegant dinners" to flaunt status and tradition.
