And when it's hot, pop it in the freezer for a slightly chilled version ❄️ ROASTED POTATO SALAD (serves 3-4): 200g Soy Skyr 4 tbsp Chopped Dill 4 tbsp Chopped Chives 2 tbsp Nutritional Yeast 1/4 to 1/2 Red Onion 2 tbsp Chopped Jalapeños (optional, replace with gherkins if you prefer) 1 Cucumber (I used Noa) 150g Chickpeas 1 tbsp Mustard Juice of 1/2 Lemon 800g Small Potatoes Olive Oil Salt Cooking: Boil for 15-20 minutes (until tender), mash on a non-stick baking sheet or one lined with parchment paper, and bake at 200°C (390°F). Fan oven, 35-40 min.
