The fragrant aroma of sesame oil stimulates the appetite. In fact, its market size is steadily increasing. Specialty stores and even "freshly pressed sesame oil" are emerging. ■Why "Open Sesame"? The Unknown Effects of Sesame Junna Yamagata (Caster): Sesame seeds are packed tightly into a single pod, containing about 100 seeds. When the seeds ripen, the pod splits open. One theory suggests this is the origin of the phrase "Open Sesame" (according to Takemoto Oil Co., Ltd.). According to registered dietitian Mayumi Atsumi, sesame contains polyphenols called "sesame lignans," such as sesamin. These have antioxidant effects and are said to mitigate the rapid decline in cell function. However, depending on how you eat them, you might be missing out. ■Missing Out Depending on How You Eat It! What's the Effective Way to Consume Sesame? Yamagata (caster): According to registered dietitian Atsumi, whole sesame seeds are difficult to digest because they are covered in a hard shell, and it's hard to absorb nutrients without chewing them thoroughly. Therefore, sesame oil is recommended for efficient nutrient absorption. Consequently, ground sesame seeds are better than roasted sesame seeds, and sesame oil is even better. The recommended intake per meal is one teaspoon. Incidentally, one teaspoon contains the equivalent of approximately 4000 sesame seeds (according to Takemoto Oil Co., Ltd.). ■The mystery of sesame oil with different colors despite having the same raw materials Yamagata (caster): There are various types of sesame oil, such as brown and white. Do you know the difference? According to Takemoto Oil Co., Ltd., the raw materials are actually the same, a mix of white, black, and golden sesame seeds. The difference comes down to the degree of roasting; roasting it more results in a darker color and a stronger aroma. Incidentally, the white sesame oil, "Taibai sesame oil," is made by pressing raw sesame seeds without roasting. It has a concentrated umami flavor but almost no aroma. ■Not just for stir-frying, but also for adding to desserts… How to use it effectively Yamagata Caster: Sesame oil can be used in different ways depending on the dish. We asked seasoning sommelier MICHIKO about "how to use it effectively." ▼Roasted sesame oil Recommended for dishes where you want to enjoy the aroma and flavor ●Hearty stir-fries such as meat and vegetable stir-fry →Recommended to use twice, at the beginning and at the end ●Add a little to vanilla ice cream →Increases richness and creates an addictive flavor ▼Taibai sesame oil Recommended for dishes where you want to add umami ●Salad: A drizzle at the end with salt and lemon ●Carpaccio: A drizzle on salmon or white fish Also, when making "tamagoyaki" (Japanese rolled omelet) during this season, it's a good idea to use sesame oil instead of dashi (Japanese soup stock).
