Dhaba Vegetable Karahi – A colorful and nutritious vegetable karahi prepared in traditional dhaba style with fresh vegetables, tomatoes, and bold desi spices. Frenzee – A refreshing chilled drink packed with fruity flavors, making it the perfect beverage to enjoy during warm summer days. These recipes create a complete meal featuring rice, vegetables, and a refreshing drink for the whole family. RECIPES FEATURED ANGAARI CHICKENN PULAO Ingredients Chicken 1 kg 16 pcs Chili powder 2 tbsp Turmeric 1 tsp Coriander powder 1 tbsp Salt 1 ½ tsp Allspice ¾ tsp Ginger garlic 1 tbsp Coriander leaves ½ cup Green chilies 4 chopped Yogurt 1 cup Butter 4 ounce Whole spices mixed 1 tbsp Brown onion ¾ cup Rice 750 gm Milk ¾ cup Water as required Mint leaves ½ cup Oil ¼ cup METHOD Marinate chicken with ginger garlic, and all the dry spices and yogurt, mix it well, leave it for an hour. Heat oil and butter, add whole spices, add marinated chicken pieces, fry well till nicely brown, then add brown onion, remaining marinade, fry for 2 mins, then add soaked rice, milk, water, mix it well, add coriander, mint, sliced green chilies, leave it on dum for 10 mins, give dum of coal, serve with sagu raita. SAGU RAITA Ingredients Tapioca pearls ¼ cup soaked for 15 mins and boiled for 10 mins Cucumber chopped 1 cup Cumin seeds ½ tsp Yogurt 1 ½ cup whipped Salt ½ tsp Sugar 1 tbsp Coriander leaves chopped 1 tbsp Green chilies 2 chopped Peanuts 2 tbsp roasted and grind to a powder Ingredients for Tempering : Clarified butter 1 tbsp Cumin ½ tsp Curry leaves 12 METHOD Mix all together in whipped curd, give baghar, serve with pulao, garnished with mint leaves and sprinkle chat masala. DHABA VEGETABLE KARAHI Ingredients Potatoes 3 Boiled peas ¾ cup Carrots 2 chopped Cauliflower 2 cups Brinjal 1 chopped Chopped ginger 1 tbsp Chopped tomatoes 2 Mustard seeds ½ tsp Oil ½ cup Salt 1 tsp Chili powder 1 ½ tsp Turmeric ¼ tsp Roasted and crushed cumin 1 tsp Allspice ½ tsp Green chilies 4 Coriander leaves 3-4 tbsp METHOD Heat oil, add mustard seeds with chopped ginger, chopped green chilies, cumin, fry, add in chopped tomatoes, fry well with salt, chili powder and turmeric, fry well, add in potatoes, carrot with ½ cup water, when nearly tender add cauliflower, boiled peas and brinjal, add ½ cup water, cover and leave it on dum. Lastly add allspices, coriander leaves and serve with roti.
