Karahi Cholay – Spicy chickpeas cooked in a rich karahi-style masala with tomatoes, onions, and traditional seasonings for an authentic desi taste. Bhaturay – Soft, fluffy, and golden-fried flatbreads that pair perfectly with spicy cholay, making a classic combination loved across South Asia. This episode brings together comfort food, traditional flavors, and homestyle cooking for a complete desi feast. RECIPES FEATURED KARAHI CHOLAY Ingredients Boiled chickpeas 250 gm Tomato puree 4 tbsp Finely chopped onion 1 cup Ginger garlic paste 1 tbsp Chili powder 1 tsp heaped Salt 1 tsp Allspice 1 tsp leveled dried pomegranate seeds grounded 1 tsp Oil ½ cup Green chilies 3 Cut in julienne Potato 1 cut into fingers Coriander leaves 2 tbsp METHOD Soak chana overnight, boil till soft. Heat oil in a karahi, add onion, slightly brown, add ginger garlic paste with tomato puree and all the masalas, fry, add chanas mashing a few to thicken gravy, add julienne of green chilies, coriander leaves, top with fried potato chips. BHATURAY Ingredients Flour 2 cups Yogurt 1 cup Soda ¼ tsp heaped Salt ½ tsp Oil 1 tbsp Oil for deep frying METHOD Knead flour, yogurt, salt and a tbsp of oil together, add water and make a stiff dough, roll out small balls into small bhaturas, fry in hot oil till puff and golden, serve with karahi chholay. TAHERI Ingredients Potatoes 2 Peas 1 cup Carrots 2 Beans 1 cup chopped Rice ½ kg Whole spices 1 tbsp mixed Salt 2 tbsp Garlic 1 tbsp Turmeric ½ tsp Brown onion 1 cup Green chilies 4 Chili powder 1 tsp heaped Yogurt ½ cup Tomatoes 3 slices Oil ½ cup METHOD Heat oil, add brown onion, garlic, whole spices, all the seasonings, yogurt, tomatoes, vegetables and fry well, add 2 cups water when boiling cover and cook till veggies tender, then add rice, cook on high flame for 10 mins, then lower flame, put on dum, lastly add green chilies, serve with raita.
