This chic dessert shouldn’t necessarily come from France, whence its name originates, but it could come just from your kitchen. Éclairs means "lightning" because these decadent sweets disappear at lightning speed. Éclairs with strawberries and pistachios are a proof that luxury comes even in small sizes, crunchy on the outside and creamy on the inside with the taste that dances in your mouth in every bite. A dance of pistachio and strawberry flavours intertwines through all the layers. From the crunchy biscuit‘s texture (from ground oats, coconut chips and pistachios), to the velvety cream (from cashews, avocados and pistachios) which hides a strawberry filling inside (that overflows when you bite it). All together topped with strawberry glaze which gives a delicate pink colour. Oh la la. As all prime desserts are a blend of prime art of preparation and premium ingredients, these eclairs are just that. And has a prime look as well. Whole strawberries and sliced pistachios are used for the final decoration, which for me is the most beautiful part of the job.
