We spent a day following Mr. Iwamoto, the head of the sushi department at Yaosen! We followed the workflow of the sushi department, which is usually not seen by the public. After graduating from university, Mr. Iwamoto worked on a farm. Later, through a connection with President Ichihara, he changed jobs to Yaosen shortly after its founding. He became the purchasing manager, even though he didn't know how to prepare fish, and was a key figure in supporting the company during its early stages. Afterward, he honed his sushi-making skills at Takoichi and established the sushi department at Yaosen. Now, utilizing the fish purchased by the fresh fish department, they offer sushi that is rarely seen in ordinary supermarkets. Unfortunately, it was pouring rain on the day of filming. Even so, the sushi department's ingenuity was evident in their weather-appropriate store layout, bargain items, and platters using the best ingredients of the day.
