In today’s video, I’m showing you how to make a perfect keto almond flour dough for empanadas — and why it’s SO important to follow each step exactly. Keto doughs can be a little different from regular dough, so the right temperature, mixing method, and baking time make all the difference! This recipe gives you a flexible, easy-to-roll dough that won’t crack when folding your empanadas. Just follow the instructions closely and you’ll get amazing results every time. ⭐ Why following the instructions matters The cheeses must melt to the right texture The dough needs to be mixed in the correct order Resting time affects how easy it is to roll Baking time and temperature give you the perfect crust Small changes can make the dough too dry or too sticky 🧑🍳 What I show in this video: How to melt the cheese without burning it How to combine the ingredients for a smooth dough The exact texture you should look for before rolling How to shape and seal empanadas so they don’t open in the oven The best way to bake for a golden, firm crust 🥟 Ingredients 2 cups almond flour 3 cups shredded mozzarella cheese 2 tbsp cream cheese 2 eggs ½ tsp salt ½ tbsp baking powder 🥟 Instructions Mix dry ingredients In a bowl, combine 2 cups almond flour, ½ tbsp baking powder, and ½ tsp salt. Add eggs Add 2 beaten eggs to the dry ingredients and mix until a slightly sticky dough forms. Melt the cheeses In a non-stick pan over low heat, melt 3 cups shredded mozzarella with 2 tbsp cream cheese, stirring constantly until smooth. Optional: You can also melt the cheeses in the microwave in 1–2 minute intervals, stirring in between. Combine cheese and dough Add the melted cheese mixture to the almond flour and egg dough. Mix with a spatula or use a mixer for easier handling. Rest the dough Let the dough sit for 15 minutes and wrap it with plastic wrap to prevent it from drying out. Roll out the dough between two sheets of parchment paper. Cut circles using a cookie cutter or cup. Add your favorite filling — I used chicken, but ground beef work great. Seal the empanadas like in the video using fingers Brush the tops with a beaten egg for a golden finish. Preheat oven to 375°F (190°C) and bake for 20–25 minutes until golden.
