Waste to Taste: Apple Peel Chutney Ready in: 10 minutes Ingredients 200 g apple peels, washed, boiled, and drained 1 tbsp ghee or oil 1 tsp cumin seeds 2–3 inch piece ginger, chopped 2–3 green chilies (adjust to taste) 1 apple, pureed 2 tsp salt (or to taste) 1 tsp red chili powder 1 tsp Kashmiri red chili powder 1 tsp coriander powder 1 tsp cumin powder 1 tsp amchur (dry mango) powder or chaat masala ½ cup fresh coriander leaves, chopped 2 tsp lemon juice For Garnish 1 tbsp desi ghee Method 1. Heat the ghee or oil in a pan. 2. Add the cumin seeds and let them splutter. 3. Add the chopped ginger and green chilies. Sauté for 1–2 minutes until fragrant. 4. Add the boiled and drained apple peels. Cook for 2–3 minutes. 5. Stir in the pureed apple. 6. Add the salt, red chili powder, Kashmiri red chili powder, coriander powder, cumin powder, and amchur powder (or chaat masala). Mix well and cook for 3–4 minutes, stirring occasionally. 7. Add the chopped fresh coriander leaves and lemon juice. Mix well and cook for another minute. 8. Transfer to a serving bowl and drizzle with 1 tablespoon of desi ghee. Serving Suggestion: Serve hot with paratha, roti, or naan. This tangy, spicy chutney is a delicious way to reduce food waste while making the most of apple peels.
