Bharwa Baingan (Chatpate Masaledar Dhaba Style) Ingredients For the Stuffed Brinjals 300 g small brinjals (eggplants), washed Stuffing Masala 1 tsp salt (or to taste) ½ tsp red chili powder ½ tsp turmeric powder 1 tsp coriander powder ½ tsp cumin powder 1 tsp amchur (dry mango powder) 1 tsp garam masala 1 tsp green chili-ginger paste 1 tsp oil (or as needed) For Frying 2 tbsp mustard oil ⸻ For the Curry 2 tbsp mustard oil 2 bay leaves 2 dry red chilies 1 tsp cumin seeds 1 tbsp ginger-garlic-green chili paste 1 cup onions, finely chopped 1 tomato, pureed 1 tsp turmeric powder 1 tsp coriander powder ½ tsp cumin powder ½ tsp red chili powder 1 tsp chaat masala ½ tsp salt (or to taste) 2 tsp yogurt 1 tsp dried fenugreek leaves (kasuri methi) ½ cup fresh coriander leaves, chopped ⸻ Method 1. Prepare the Brinjals 1. Make a cross-shaped slit in each brinjal, keeping the stem intact. 2. Mix all the stuffing ingredients into a thick paste. 3. Stuff the masala into the slits of the brinjals. 2. Fry the Brinjals 1. Heat 2 tbsp mustard oil in a pan. 2. Add the stuffed brinjals and fry on medium-low heat until partially cooked and lightly browned. 3. Remove and set aside. 3. Make the Curry 1. Heat 2 tbsp mustard oil in the same pan. 2. Add bay leaves, dry red chilies, and cumin seeds. 3. When aromatic, add the ginger-garlic-green chili paste and sauté for 1 minute. 4. Add chopped onions and cook until golden brown. 5. Add tomato puree and cook until the oil separates. 6. Add turmeric, coriander powder, cumin powder, red chili powder, chaat masala, and salt. 7. Mix well and cook for 2–3 minutes. 8. Add yogurt and stir continuously to prevent curdling. 4. Finish the Dish 1. Add the fried stuffed brinjals to the gravy. 2. Add a little water if needed. 3. Cover and simmer for 8–10 minutes until the brinjals are tender. 4. Crush the dried fenugreek leaves between your palms and add them. 5. Garnish with fresh coriander. Serving Suggestion Serve hot with: Roti Phulka Naan Paratha This dhaba-style version is tangy, spicy, and rich, with the stuffed brinjals absorbing all the flavors of the masala gravy.
