Peshawari Kheer (Rich & Creamy)

Peshawari Kheer (Rich & Creamy) Ingredients 2 liters milk 1 cup basmati rice 1½ cups milk powder 1½ cups sugar 1½ cups fresh cream 4 rusk toasts ¼ cup cashew nuts, chopped ¼ cup almonds, chopped ¼ cup pistachios, chopped 1 tsp green cardamom powder 3 cups water (for cooking the rice) Method 1. Wash the basmati rice and cook it in 3 cups of water until soft. 2. In a large pot, bring the milk to a gentle boil. 3. Add the cooked rice to the milk and cook on low heat, stirring occasionally. 4. Add the milk powder and mix well until fully dissolved. 5. Stir in the sugar and continue cooking until the mixture thickens. 6. Crush the rusk toasts into fine crumbs and add them to the kheer. This helps create a rich, creamy texture. 7. Add the fresh cream, chopped cashews, almonds, pistachios, and cardamom powder. 8. Cook for a few more minutes, stirring continuously. 9. Remove from heat and allow to cool. 10. Pour into a serving dish or bowl. 11. Refrigerate for 4–5 hours, or until well chilled and set.
