Soft & Fluffy Easter Babka Recipe Starter • 1 cup all-purpose flour • 1/4 cup sugar • 2 tbsp yeast • 2 cups warm milk • 1 cup butter, melted Dough • 8 eggs • 2 cups sugar • 1 tsp salt • 1 tbsp vanilla extract • 1 cup sour cream • 8-10 cups all-purpose flour (Canadian flour works best) • 2 tbsp light olive oil • 1-1.5 cups raisins (soaked in hot water, then drained) Sweet Glaze • 1 egg whites • 2 tbsp sugar Instructions 1. Prepare the Starter In a large bowl, whisk together flour, sugar, yeast, and warm milk Add melted butter and mix well, Let sit for 10-15 minutes, until fluffy and bubbly 2. Make the Egg Mixture Beat eggs and sugar on high speed for 8 minutes until light and airy. Add salt and vanilla and mix Switch to a dough hook and mix in sour cream on low speed for 1 minute. 3. Combine Add the starter to the egg mixture and mix on low speed 4. Add Flour & Knead Gradually add sifted flour (8-10 cups), mixing 1 cup at a time. Knead with a dough hook for 10-15 minutes until smooth and slightly sticky. 5. Add Oil Add olive oil and continue kneading until fully incorporated. Repeat light kneading a few times until dough is soft and elastic 6. First Rise Place dough in a bowl, cover, and let rise in a warm place for 30 min 7. Add Raisins Drain soaked raisins and gently knead into the dough. 8. Second Rise Cover and let rise again for 1.5-2 hours 9. Shape • Roll dough into a circle • Roll into a log • Shape into a spiral or round loaf • Place into prepared molds 10. Final Rise Let rise for 1- 1.5 hour, until puffy 11. Bake Bake at 350°F (175°C) on the lower rack (conventional bake) Bake until golden brown (about 30-45 minutes) Sweet Glaze & Finish In a small bowl • Beat 1 egg white + 2 tbsp sugar until thick and fluffy Once babka is completely cooled, gently spread the qlaze on top.
