Female Entrepreneur Brings Maraş Tarhana to Turkey and Europe Cennet Karaüzüm, a 55-year-old female entrepreneur living in Kahramanmaraş, has transformed her production of EU-registered Maraş tarhana, which she has been producing using traditional methods, into mass production thanks to modern machinery acquired with the support of the Eastern Mediterranean Development Agency (DOĞAKA). Having produced tarhana for years using a cooperative method with her neighbors, Karaüzüm is now both increasing her production capacity and delivering her products throughout Türkiye and abroad. Under a project implemented by the Ministry of Industry and Technology and DOĞAKA, and financed by the European Union, Cennet Karaüzüm obtained tarhana cooking and spreading machines, stating that the production process has significantly accelerated. She explained that processes that previously took hours can now be completed in a much shorter time, and that they aim to produce 70 to 80 tons of Maraş tarhana and firik this year. The success story of this female entrepreneur serves as an example for both preserving the geographically protected delicacies of Kahramanmaraş and strengthening local production, while also increasing the value of Maraş tarhana in national and international markets. Due to high demand, the products are shipped to many cities across Türkiye and exported abroad, primarily to Europe. Dr. Eda Ganiyusufoğlu, a faculty member at the Department of Nutrition and Dietetics, Faculty of Health Sciences, Kahramanmaraş Sütçü İmam University, stated that Maraş tarhana stands out with its low fat content, high protein and fiber content, and emphasized that thanks to its fermentation with yogurt, it is a significant traditional food rich in probiotics and high in vitamins and minerals.
