This is a staple dish recommended for intestinal health, dieting, and relieving constipation. ■Ingredients (Easy to Make) Natto (small grain): 3 packs (approx. 120g-150g) *No sauce required Dried rice koji: 100g Carrot: 1/2 (approx. 70-80g) Dried daikon radish: 20g (dried) Hijiki seaweed sprouts (dried): 5g Roasted white sesame seeds: 3 tablespoons Water or lukewarm water (for priming the koji): 2-3 tablespoons (30-50ml) [Nikiri Sauce] Koikuchi soy sauce: 100ml Mirin: 100ml Vinegar: 1 tablespoon (15ml) ■Recipe [Preparation] Dried koji: Place in a bowl, add water or lukewarm water (2-3 tablespoons), mix, and leave for 20-30 minutes to moisten (a pro tip for quick softening). Dried Daikon: Quickly rinse to remove any dirt, then squeeze out the excess water (it's important not to soak it for too long). Slice into 1cm pieces using kitchen scissors. Carrot: Julienne with the skin on. Hijiki: Lightly rinse with water and drain thoroughly. [Making the Sauce & Cooking the Hijiki] Put soy sauce, mirin, vinegar, and the rehydrated hijiki in a pot. Place over medium heat and bring to a boil. (This will remove the fishy smell from the hijiki and infuse it with flavor at the same time.) [Temperature Control] Once boiling, turn off the heat and add the carrot while it's still hot, allowing it to soften in the residual heat. Cool to below 60°C. Important The koji mold will be killed if the temperature exceeds 60°C, so be sure to allow it to cool. [Mixing] Add the moistened koji and dried daikon radish to the cooled sauce (with hijiki seaweed and carrots) and mix well to absorb the sauce. Finally, add the natto and roasted sesame seeds and mix well until sticky. [Aging/Storage] Transfer to a storage container and refrigerate overnight to allow the flavors to blend. The koji is ready when it's softened. ■Storage Period Refrigerate for approximately 2 weeks. *The flavors will infuse into the dried daikon radish and it will become more delicious with each passing day. ■ Recommended Ways to Eat Put it on hot rice or noodles and drizzle with egg yolk (highly recommended!)
