Fabriquer ses MERGUEZ Maison ?!

Today we're making homemade merguez sausages! The Chipo/Merguez combo is definitely not my summer favorite! But it's a great way to save time, and it's quick to cook! Making them at home is a bit of a change. Even though they're probably excellent at your local butcher's, here you can add absolutely whatever you want, and after a few tries, you'll have custom-made merguez sausages! :D Take the tips that interest you and adapt them based on what you want to put in them! For the quantities: About 40% beef About 40% lamb About 20% pork fat (or lamb and/or beef) 15g salt/kg 4-5g pepper/kg Parsley to taste (optional) 50g spices per kilo (Here: Ras El Hanout + Paprika) 30g harissa per kilo (Double or triple if you want it extra spicy) 10g olive oil per kilo 5-10% of the total meat volume in water 2 garlic cloves per kilo Sheep casings I hope you enjoy this video and find what you're looking for!
