We'll be making simmered sardines with plums that are so tender that they're even bone-soft. It's long been said that pickled plums remove the fishy odor of sardines and soften their bones. The wisdom of our ancestors is amazing. However, if you want to simmer sardines until they're soft all the way to the bone, you'll need to cook them for about 3-4 hours, but if you use a pressure cooker, the pressure time is only 20 minutes. (excluding the time it takes to add the broth afterwards). What's more, it also saves on gas. This time, we'll be making delicious simmered sardines with plums using a pressure cooker.
