Cover with a drop lid and simmer over low heat for 10 minutes 8. Discard the liquid 9. Add the ginger and pickled plums 10. Add water 11. Add the sake, sugar, mirin, and soy sauce and bring to a boil over high heat 12. Cover with a drop lid and simmer over low heat for 20 minutes 13.
