While searching for the best focaccia, I not only came across him but also his new book. @JoSemola shares his brilliant focaccia recipe with us and shows us step by step what we need to do to bring a little bit of Italy into our homes. After this video and this recipe, you're all guaranteed to make the perfect focaccia. Here's Jo's recipe: 600 g Tipo 1 wheat flour Alternatively: Type 1050 wheat flour 450 g water 2.5 g yeast 22 g olive oil 15 g salt 1. Roughly mix the water and flour until smooth, then let it stand for 30 minutes for autolyse. 2. Add the yeast and salt, and knead intensively for 7-10 minutes on medium-high speed. Add olive oil and knead for another 5-7 minutes. 3. Cover the dough and let it rise for 20 hours at 15°C, performing two folds (drip and fold) during the first hour. 4. Line a 40x32cm baking pan with parchment paper, oil it, and place the dough inside. Gently press it into the pan and into the corners. Let it rest for 4 hours at 15°C. 5. Preheat the oven to 230°C. Massage the focaccia with olive oil once more and top as desired.
