They are delicious when freshly fried, but they also taste great even after cooling, making them perfect for meal prep. I will explain the key tips for making perfect croquettes, so be sure to give it a try! 【Ingredients】 (Makes 6 pieces) 500g potatoes 150g ground beef and pork mix 1/2 onion 1 tbsp soy sauce 1 tbsp mirin 1 tbsp cooking sake 1 tsp sugar 1/2 tsp dashi powder Salt and pepper to taste Vegetable oil as needed Panko breadcrumbs as needed 3 tbsp cake flour 1 egg 1 tbsp water Frying oil as needed 【Instructions】 1. Peel the potatoes, soak them in water for 5 minutes, then drain and microwave at 600W for 7–8 minutes. 2. Finely chop the onion. 3. Mash the potatoes. 4. Heat oil in a frying pan, add the ground meat, and cook until halfway done. Then, add the chopped onion and cooking sake, and continue frying. 5. Once the meat is fully cooked, add sugar and mirin, and stir-fry. Then, add soy sauce, dashi powder, salt, and pepper, and mix well. 6. When most of the moisture has evaporated, add the mashed potatoes and stir-fry for about 1 minute. 7. Spread the mixture onto a tray, cover the surface with plastic wrap, and let it cool completely. 8. In a separate bowl, mix egg, water, and flour to make a batter. 9. Once the mixture has cooled, divide it into six portions, shape them, dip them in the batter, and coat with breadcrumbs. 10. Deep fry in 170°C oil until evenly golden brown.
