大廚的「魚香茄子煲」鹹香! 惹味! 保證兩碗飯都不夠你吃！| Eggplant with Minced Pork & Salted Fish

Welcome to the “Wine Full, Rice Plenty” channel, I’m Chef Po! Today, I’m sharing one of my favorite dishes: Eggplant with Minced Pork & Salted Fish! I recommend frying the eggplant for the best texture—it comes out soft and perfectly cooked! For a more even flavor, blanch the eggplant after frying and add a pinch of salt and sugar. Fry the salted fish with some ginger to remove any fishy smell and boost the aroma. If you love spicy food, feel free to add a bit of chili pepper—it tastes better with a slight kick! But if you’re cooking for kids, skip the chili. For seasoning, adjust to your taste since everyone’s preferences vary. Some like it saltier, others prefer it milder, so always taste and add more salt or soy sauce if needed. If you don’t have ham stock, chicken broth works just fine. For XO sauce, I used a tablespoon in the video, but I suggest starting with half a tablespoon since different brands vary in saltiness. What dishes do you want to see next?
