It’s incredibly easy and quick to make, yet tastes like it came straight from the bakery! 🍰 Be sure to try this wonderful recipe and bake it along with me! ✨ 🫐 In this recipe: — An incredibly moist and simple yogurt cake — Fruity blueberries meet crunchy butter streusel — The perfect cake for any occasion! ------------------------------------------------------------- Ingredients Cake batter ◾️ 3 eggs ◾️ A pinch of salt ◾️ 1 tsp vanilla sugar (or vanilla extract) ◾️ 110 ml sunflower oil (about 3.7 fl oz) ◾️ 160 g thick yogurt or sour cream (about 5.6 oz) ◾️ Zest of 1 lemon 🍋 ◾️ Juice of ½ lemon ◾️ 270 g all-purpose flour (about 9.5 oz) ◾️ 15 g baking powder (about 0.5 oz) ◾️ 200–220 g fresh blueberries (about 7.1–7.8 oz) Streusel ◾️ 70 g flour (4 tbsp) (about 2.5 oz) ◾️ 30 g sugar (2 tbsp) (about 1.1 oz) ◾️ 45 g cold butter (about 1.6 oz) Glaze ◾️ 30 g powdered sugar (about 1.1 oz) ◾️ 1 tbsp milk (about 0.5 fl oz) Size of baking pan: Ø 22 cm. Baking ◾️ 347°F (175°C) without convection for 60–65 minutes 🕙 ◾️ Grease the baking pan with butter and line it with parchment paper --------------------------------------------------------------------- Tips and Tricks: Remember to only zest the yellow part of the lemon. The white part underneath is bitter, and we don’t want that in our fine cake. For the best streusel that melts in your mouth, the butter must always be ice-cold. Cut it into small cubes, then it will mix better with your fingers into fine crumbs. To prevent the berries from sinking to the bottom, you can toss them in a little flour before adding them. That’s my little secret trick! -------------------------------------------------------------------- Step by Step Put 3 eggs, a pinch of salt, and 1 tsp of vanilla sugar into a bowl. Add 110 ml of sunflower oil, 160 g of yogurt, the zest of one lemon, and the juice of half a lemon. Mix everything well. Sift in 270 g of flour and 15 g of baking powder in two stages, and carefully stir the batter until smooth. Gently fold in 200–220 g of fresh blueberries. Pour the batter into the prepared baking pan (Ø 22 cm) and smooth it out. For the streusel: Mix 70 g of flour, 30 g of sugar, and 45 g of cold butter with your hands until crumbly. Evenly distribute the streusel over the batter. Bake the cake in the preheated oven at 175°C (without convection) for 60–65 minutes. Do the toothpick test: If no batter sticks to the wooden stick, the cake is done. Allow the finished cake to cool completely in the pan after baking. For the glaze: Mix 30 g of powdered sugar with 1 tbsp of milk until smooth. Spread the glaze evenly over the cooled cake.
