Ingredients Cake Batter ◾️ 2 large eggs ◾️ 1/2 tsp salt ◾️ 2 tsp vanilla sugar (or vanilla extract) ◾️ 150 g sugar (about 6 tbsp) ◾️ 80 ml sunflower oil ◾️ 80 ml milk (room temperature, about 6 tbsp) ◾️ 75 g sour cream 20% (room temperature, about 3 tbsp) ◾️ 180 g all-purpose flour (about 12 tbsp) ◾️ 8 g baking powder (1.5 tsp) ◾️ Zest of one orange Pineapple Topping (bottom of the pan) ◾️ 60 g soft butter ◾️ 80 g brown sugar (about 4 tbsp) ◾️ 1/2 tsp ground cinnamon ◾️ 10 canned pineapple rings (350 g) Decoration ◾️ Shredded coconut (for sprinkling) 📏 Baking Pan: 22 cm diameter Baking ◾️ 356°F (180°C) without fan for 40-45 minutes ◾️ Lightly grease the pan with butter and line the bottom and sides with parchment paper --------------------------------------------------------------------------------------------------- Important Notes ◾️ Beat the eggs with the sugar for 2-3 minutes until the mixture is light and creamy – this makes the batter particularly airy ☁️ ◾️ Add the flour in two stages to avoid lumps and to mix everything better 🥣 ◾️ Pat the pineapple rings dry with paper towels beforehand to remove excess moisture, ensuring the cake bakes perfectly! 🍍 Step by Step 1. In a large bowl, combine 2 large eggs, 1/2 tsp salt, 2 tsp vanilla sugar, and 150 g sugar. 2. Beat everything with a mixer for 2–3 minutes until a creamy consistency is achieved. 3. Pour in 80 ml sunflower oil, 80 ml milk, and 75 g sour cream (room temperature). 4. Grate the zest of one orange, add it to the bowl, and mix everything well. 5. Gradually add 180 g flour in two stages along with 8 g baking powder. Stir the batter carefully. 6. Prepare a baking pan (22 cm diameter): lightly grease it with butter to keep the parchment paper in place, and line the bottom and sides with it. 7. Evenly spread 60 g soft butter on the bottom of the pan. 8. Sprinkle 80 g brown sugar and 1/2 tsp cinnamon over the butter. 9. Pat the pineapple rings dry with paper towels. Place them on the bottom and along the edges of the pan (cut 3 rings in half for this). 10. Pour the batter into the pan and spread it evenly. 11. Bake the cake for 40-45 minutes at 180°C (without fan). 12. Allow the cake to cool completely before removing it from the pan. 13. Sprinkle the finished cake with shredded coconut on top.
