We will prepare 2 beautiful, fragrant breads for people who do not have yeast. It will be very tasty with a nice aroma, healthy bread, because it will contain a minimal amount of yeast, which is only 1 gr. #bread #yeast #yeast #healthyliving CUTTING TECHNIQUE - TEST - how to properly carve the bread    • Τεχνική κοπής - ΤΕΣΤ - πως χαράζουμε σωστά...   DOUGH - prepare in the evening and leave at + 21-22 for 10-12 hours • 200 gr. flour g.o.x. • 1 gr. dry yeast or 3 gr. fresh yeast • 200 gr. water SEEDS - can be done in the evening or 2 hours before kneading the dough • 50 gr. flax seeds • 25 gr. water DOUGH - prepare the dough, as soon as the dough rises • 400 gr. yeast • 370 gr. water • 75 gr. Inflated flax seeds • 500 gr. flour g.o.x. • 100 gr. whole weat flour • 15 gr. salt Dough moisture:  800 gr. flour = 100%  570 gr. water = 71.25% Roughness of the dough: Pour a little oil in the bowl and leave for 2.5 - 3 hours at room temperature. The temperature plays a more important role in the maturation of the fermentation, so we adjust accordingly, because in the summer at a higher temperature it may only take 1.5 - 2 hours, while in a cooler room the maturation of the fermentation can increase more than three hours. During these hours, this can be every half hour or every 45 minutes or even every 1 hour, we will do at least 2-3 folds, adjust it as you like, as long as these 2-3 folds are done, because the dough it is enriched with oxygen and thus we get fluffy, soft breads. Put one loaf of bread in a mold and the other in the basket and leave in a warm place for 1.5 - 2 hours until they double, as I said before, depending on the temperature in the house. The breads were puffed, doubled, passed the test by pressing. Those of you who follow me know that by tapping your finger, if the puddle returns slowly and not quickly, then it is time to bake our bread. Baking: Preheat the oven together with the hull for 25-30 minutes, at a higher temperature. Once the oven is warm, turn the basket over on greaseproof paper. Bake in a preheated oven, up and down resistance, at 230 degrees for 15 minutes, but these 15 minutes will be steamed, so we will add 250 gr. boiling water at the bottom or top of the oven and after 15 minutes, open the oven, take out the utensil with water, open the lid of the hull. If we cook only in the hull, we will not need the steam, because the steam is formed inside the hull anyway. Continue baking at 190 degrees, without steam for 30-35 minutes. After baking, take it out of the form and let the buns cool completely, which smell so good. It is not difficult to prepare, it is exactly the same as we prepare yeast at night, so we prepare the pseudo-yeast, which is made by slow fermentation, all night with a minimal amount of yeast, so we get healthier bread.
