The best temperature for a wheat dough is 21 - 24 degrees. If you have a lower temperature, below ~ 21 degrees in your space, it may take longer for the dough to ferment, depending on the temperature inside the house !!! Banneton Bread Basket 21x15x8 cm. Oval Recipe for 2 breads from ~ 500 gr. • 140 gr. yeast 100% humidity (20 + 60 + 60 or 40 + 50 + 50) • 400 gr. water - NO lukewarm (icy water in summer) • 600 gr. finely ground wholemeal flour ,, Koula ,, with 12 proteins • 12 gr. salt + 50 gr. water (summer icy water) Dough moisture ~ 78% 670 gr. all flour = 100% 520 gr. all water = 77.61% Program: at a temperature of 22 - 23 degrees --- 8 in the morning I prepare the yeast 20 + 60 + 60 (in a warm place 6 -7 hours) --- Ή at night at room temperature 9 - 10 hours (1 + 3 + 3) --- 15:15 - 15:20 Water + Yeast + Flour --- 15:50 - 16:00 Salt + Water - kneading with blows in the air --- 16:30 - 16:31 - diploma 1 possible --- 17:00 - 17:01 - diploma 2 --- 17:30 - 17:31 - diploma 3 --- 18:00 - 18:01 - diploma 4 --- 18:30 - 18:33 lamination of the dough --- 19:30 - 19:33 lamination of the dough --- 20:30 - 20:33 preforming - rest 15 - 20 minutes --- 20:50 format + 30 - 60 minutes rest in the basket, then refrigerator Maturation in the basket: Να Let it inflate for 12 - 16 hours on the bottom shelf of the refrigerator, at the lowest temperature, which is +4 +6.
