In the video, I show you the step-by-step process to achieve a light, flavorful result that really works. 🥖 Gluten-free 🥛 Dairy-free 📦 No pre-mixed ingredients In this recipe you will learn: ✅ How to achieve a crispy crust ✅ How to keep the center soft ✅ The ingredients that make a difference in the result 📝 INGREDIENTS 160g rice flour 180g cornstarch 60g sweet potato starch 40g chickpea flour 15g psyllium husk 10g xanthan gum 40g lard 30g sugar 10g salt 10g dry yeast 380g water 2 eggs 🥣 PREPARATION METHOD To make the yeast sponge, separate in a bowl: 10g rice flour, 10g yeast and 50ml water and mix well until a paste forms. Let it rise until it doubles in volume. Separate the psyllium and hydrate it with half the water, set aside. Mix the dry ingredients, add the eggs and psyllium gel. Mix well. Add the yeast sponge and gradually add the remaining water until the dough comes together. Divide the dough into equal portions, shape, make cuts, and place in a greased pan. Cover with plastic wrap and let rise to prevent the dough from drying out. Once doubled in volume, bake in a preheated oven at 200°C (390°F) for 35 minutes, adding steam for the first minute. 🗓️ SHELF LIFE AND STORAGE Like all French bread, it's best to eat it on the same day. However, you can store it at room temperature for up to 3 days, in the refrigerator for up to 7 days, and frozen for up to 60 days. To have fresh bread as if it just came out of the oven, spray it with water, then bake it in the oven or air fryer to warm it up.
