Sign up now and come with me to prove that recipes don't need gluten or dairy to be delicious! 🔥 📝 INGREDIENTS: 150g cooked and mashed potato 150g rice flour 150g cornstarch 60g sweet potato starch 20g cornmeal/corn flour 20g flaxseed flour 5g xanthan gum 6g salt 10g sugar 80g lard/ghee butter 2 eggs 8g dry yeast 240ml plant-based milk 🥣 INSTRUCTIONS: Dissolve the yeast with 10g of rice flour and 40ml of plant-based milk. Make a sponge and let it rise for approximately 20 minutes. In the bowl of a stand mixer, place all the flours, add the mashed potato, the egg, and the fat. Mix well. Add the yeast sponge and half of the plant-based milk, mixing until the desired consistency is reached, alternating with the remaining milk. The dough should be slightly sticky and sticky. Remove from the mixer, divide into portions according to the desired size, place in a greased pan and let rise for approximately one and a half hours. Before baking, brush with an egg yolk or melted coconut butter to give color.
