Southwestern Beef and Pepper Bake -- No Bake Peanut Butter Pie ------------------------------------------------------------------------------------------------------------------------ Southwestern Beef and Pepper Bake Ingredients: 1 pound ground beef 1 tablespoon olive oil 1 onion, diced 2 cloves garlic, minced 1 red bell pepper, diced 1 yellow bell pepper, diced 1 green bell pepper, diced 2 cups diced potatoes 1 teaspoon ground cumin 1 teaspoon chili powder Salt and pepper to taste 1 cup shredded cheddar cheese 1/4 cup chopped fresh cilantro (optional) Directions: Preheat your oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent. Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat. Stir in the diced red, yellow, and green bell peppers, along with the diced potatoes. Cook for about 5 minutes, allowing the vegetables to soften slightly. Season the mixture with ground cumin, chili powder, salt, and pepper, stirring to combine. Transfer the beef and vegetable mixture to a baking dish, spreading it evenly. Sprinkle the shredded cheddar cheese over the top of the mixture. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the cheese is melted and golden brown. Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh cilantro if desired. ------------------------------------------------------------------------------------------------------------------------------------------------- Easy Peanut Butter Pie INGREDIENTS: FOR THE PIE FILLING 1 ( 8 oz.) package cream cheese, softened 1 cup creamy peanut butter 1 cup powdered sugar 1 (16 oz.) container whipped topping, thawed FOR THE PEANUT BUTTER CRUMBS ON TOP 2 tablespoons powdered sugar 1 tablespoon peanut butter INSTRUCTIONS: For the pie filling: Beat the cream cheese and the peanut butter until well blended and smooth. Add the powdered sugar and beat until well blended. Gently fold in 8 oz. of the whipped topping just until combined. Pour into the crust and spread evenly. Spread the remaining whipped topping over the top. * skip this step if you are using the optional topping For the peanut butter crumbs on top: Mix the peanut butter into the powdered sugar with a fork until crumbs are formed.
