Thank you for spending time with me, and don’t forget to like, comment, and subscribe for more cooking, family life, and everyday gentle living videos! 🍽️❤️ Low carb Mexican “cornbread” Ingredients: 2 cups almond flour 1½ tsp baking powder ½ tsp salt 1 tsp cumin 1 tsp red pepper flakes ½ cup diced onion 2 jalapeños, seeded diced small 1 cup frozen corn 3 large eggs, beaten ½ cup sour cream ¼ cup butter, melted 2 cups cheddar cheese, shredded (not finely shredded) Directions: 1. Preheat oven to 375* 2. In large bowl add 2 cups almond flour, baking powder, salt, cumin. Mix until well combined. 3. Add red pepper flakes, stir. 4. Add vegetables and mix to combine. 5. Add egg, sour cream, melted butter. Mix until well combined 6. Stir in cheddar cheese. 7. Grease a casserole dish. 8. Spoon mixture out into baking dish and smooth out into pan. 9. Place in oven and bake for 20-25 minutes until edges have browned. 10. Remove from oven and allow to cool before cutting.
