What's For Dinner? -- Butter Beans and Cornbread, Fried Potatoes and KFC Slaw Butter Beans (large lima beans) 1 lb dry large lima beans 2 ham hock pieces ( I used bacon this time ) 2 cups chicken broth 3 cups water 1 tsp salt 1/2 tsp black pepper Soak the beans overnight Rinse and drain the beans Place beans in a crockpot Add chicken broth, water, ham hocks, salt and pepper to crockpot Cook on low 6 to 8 hours until beans are tender Remove the ham hocks and shred the ham Place shredded ham back in the beans Serve and enjoy ------------------------------------------------------------------------------------------------------------------------------------ KFC Slaw Ingredients 1 green cabbage, chopped (about 7-8 cups) ½ cup shredded or chopped carrot 2 tablespoons minced onions ½ cup mayonnaise ( I used a little more) ½ cup buttermilk 2 tablespoons white vinegar 2 tablespoons lemon juice 2 tablespoons of sugar. (I used a little more) ½ teaspoon mustard powder Salt and pepper to taste Instructions 1. Chop the cabbage in the food processor. It must be small, just slightly larger than the size of rice. You can shred the carrots or chop them as you did the cabbage. Add the cabbage, carrots, and minced onion to a large bowl 2. In a small bowl, using a whisk, combine the mayonnaise, buttermilk, mustard powder, vinegar, lemon juice, sugar, salt, and pepper 3. Add the dressing to the veggies and mix until well combined --------------------------------------------------------------------------------------------------------------------------------------------- Corn Bread Gluten Free 1 ½ to 2 cups corn meal (gluten free) ½ cup Bob’s Red Mill gluten free flour 1 tsp baking powder optional a sprinkle of salt ¼ cup oil 1 large egg 1 1/3 cup buttermilk or milk Add all ingredients in a bowl and mix thoroughly Pour in to a well greased cast iron skillet bake at 450 degrees for 20 to 25 minutes
