Broccoli Cheddar Cheese Soup -- Chocolate Coconut Cake -- Pimento Cream Cheese Spread Broccoli Cheddar Soup Ingredients: 2 Tbsp butter 1 medium onion chopped 1 stick butter ½ cup flour 4 cups half and half 4 cups chicken broth 1 lb fresh broccoli 2 carrots diced small ½ tsp nutmeg salt and pepper to taste 16 oz sharp cheddar cheese grated Instructions: Saute the onion in 2 Tbsp butter until onions are soft Add 1 stick butter and let it melt Add flour and stir for 2 to 3 minutes Add the half and half slowly while stirring Add chicken broth and stir Add the carrots and broccoli Simmer for 25 minutes on low heat stirring occasionally Add nutmeg, salt and pepper Add cheese and stir until melted Serve and Enjoy
