Recruitment form here ↓ https://www.sanpi-ryoron.com/recruit/ ■ Eggplant Tataki (2-3 servings) 【Ingredients】 3 eggplants, 2 myoga ginger, 5 shiso leaves, 1/3 pack daikon sprouts, 1/4 leek, 50g fresh ginger, appropriate amount of bonito flakes, 1 tablespoon salad oil, 1 tablespoon sesame oil A (4 tablespoons soy sauce, 2 tablespoons mirin, 2 tablespoons vinegar, 2 tablespoons lemon juice, 3g kombu seaweed) 【Instructions】 ① Remove the stems from the eggplants and slice them diagonally into approximately 5mm thick slices. Soak in water for about 10 minutes Drain in a colander and pat dry with kitchen paper. ② Finely chop the myoga ginger and cut the daikon sprouts into three equal lengths. Finely shred the shiso leaves. Slice the green onions thinly. Slice the fresh ginger into thin strips. Mix all the aromatic vegetables in water and drain. ③ Mix ingredients A in a bowl to make homemade ponzu sauce. ④ Add salad oil (1 tablespoon) and sesame oil (1 tablespoon) to a frying pan and cook both sides of the eggplant over medium heat. *Estimated cooking time: approximately 4 minutes ⑤ Arrange on a plate and pour the ponzu sauce from ③ over it.
