Click here for the recruitment form↓ https://www.sanpi-ryoron.com/recruit/ ■Yamagata dashi (serves 2-3) [Ingredients] 1 cucumber, 5 okra, 1 eggplant, 20g fresh ginger (regular ginger can be used), 2 myoga, 5 shiso leaves, a little salt, a little soy sauce, about 1 teaspoon kombucha A (4 tablespoons soy sauce, 1 tablespoon vinegar, 1 tablespoon mirin, 1 teaspoon sugar) [How to make] ① Rub the cucumber and okra with salt. ② Remove the stem of the eggplant and cut it into about 5mm cubes Soak in water for a while. ③ Cut off both ends of the cucumber and cut it into 5mm cubes. Cut the myoga into 5mm cubes as well. ④ Finely chop the fresh ginger and shiso leaves. *If using regular ginger, After finely chopping, soak in water for a short time. ⑤ Place the okra in boiling water, Boil for about 30 seconds, then drop into ice water, Drain, remove the stem, and cut into 5mm cubes. ⑥ Drain the water from the eggplant from ②, sprinkle with soy sauce (1/2 tablespoon) and squeeze thoroughly. ⑦ Put all the ingredients in a bowl, Mix A together, and add kombucha tea (about 1 teaspoon) to taste.
