Cambodian Lemongrass Beef Skewers Khmer Beef Skewers with Quick Pickled Cabbage, Cucumber, and Carrot Salad Khmer Kroeung- Khmer spice paste: • Kroeung- Khmer Kroeung- Khmer spice paste Knorr soy sauce seasoning- https://amzn.to/3ltvKku oyster sauce- https://amzn.to/40NTcJk Knorr chicken seasoning- https://amzn.to/3IiUWmT Coconut Cream- https://amzn.to/3lZPpZI For the Khmer Beef Skewers: • 3 lb Beef • 1/2 cup Kroeung(see video how to made Kroeung) • 4 tablespoon of sugar • 2 tablespoon of oyster sauce • 2 tablespoon of chicken seasoning mix • 4 tablespoon of oil • ½ cup Coconut cream (or milk) • 1 fresh kiwi + 1 tbsp. water blended together (Optional) • 1/2 cup finely blended roasted peanuts (or 2 tbsp. butter or 1 Satay seasoning mix use Package B (Optional) • Bamboo skewers, soaked in water for 30 minutes For the Quick Pickled Cabbage, Cucumber, and Carrot Salad: • 1/2 head of green cabbage, shredded • 1 large cucumber, sliced • 1 medium carrot, julienned • 1/4 cup white vinegar • 1/4 cup water • 3 tablespoons sugar • 1 teaspoon salt • 4 Thai red peppers Instructions: For the Quick Pickled Cabbage, Cucumber, and Carrot Salad: 1. In a large bowl, combine the shredded cabbage, sliced cucumber, and julienned carrot. Mix well. 2. Combine the white vinegar, water, sugar and salt pour it over the cabbage, cucumber, and carrot mixture. Toss to combine. 3. Let the salad marinate in the refrigerator for at least 30 minutes before serving. 4. Serve chilled and enjoy! For the Khmer Beef Skewers: 1. In a large bowl, mix together the ground beef, kroeung, sugar, oyster sauce, chicken seasoning mix, oil, coconut milk, and blended roasted peanuts (or butter or Satay seasoning mix), until well combined. 2. Divide the mixture into 3-5 portions, and shape each portion into a sausage-like shape around a bamboo skewer. 3. Preheat the air fryer to 375°F (190°C). 4. Place the beef skewers in the air fryer basket and cook for 10-12 minutes, or until the beef is cooked through and slightly charred, flipping halfway through the cooking time. 5. Once the beef skewers are done cooking, remove them from the air fryer and let them cool for a few minutes before serving. 6. Serve the beef skewers with the quick pickled cabbage, cucumber, and carrot salad on the side. Enjoy!
