One of those recipes that makes you feel good without sacrificing flavor. ❤️ #pasta #spaghetti #zucchini #ricotta #recipes #firstcourses #adv In this video, I use a special type of zucchini: trumpet zucchini, a typical Ligurian variety. They're sweet, delicate, and perfect for creating a creamy zucchini pasta dish that truly smells like summer. I quickly sauté them in the pan so they stay slightly crunchy, because limp things... we don't like them! 😄 For me, a pasta dish must be complete: carbohydrates, fiber, protein, and a whole lot of satisfaction. That's why I prepare a light and velvety fresh ricotta cream, which I use as the base of the dish. On top, I top it with spaghetti and zucchini, with almost raw cherry tomatoes for freshness, and an anchovy sauce that takes everything to another level. And then there's the pasta. For this recipe, I use Pasta Liguori, a Gragnano PGI pasta that I adore. Its porosity allows the sauce to cling perfectly, and the result truly changes. It's also made with certified Italian wheat, synonymous with quality and attention to the raw material. When you want to make a creamy zucchini pasta made just right, starting with a pasta like this makes all the difference.
